As essential to life on earth as air, water, and sunshine, salt is foundational on a biological level and for human civilization on a collective scale. Join wild foods enthusiast Sterling Roth, for a day at the coast learning the history and techniques of sea salt production. More info...

While dipping buckets into the ocean, students will be guided in the best practices of where and when to responsibly harvest sea water. Then back on dry land, Sterling will walk the class through the process of refining seawater into salt crystals for culinary use. Special focus will be given to the chemistry of the process, the details of crystallization, grain size and mitigating modern contaminants, such as microplastics.

After covering the mechanics of production, Sterling will discuss a variety of herbs, spices, and other minerals that can be infused into salt. Students will leave class with a jar or two of brine to continue the salt extraction process at home, a finished jar of sea salt, infused as desired, and an in-depth knowledge and appreciation of sea salt harvesting & extraction processes.
