Wild Salmon Seasonal Preservation with Nelly & Michael Hand

As the Pacific Northwest has grown and changed in dramatic ways, the presence of salmon in our waterways, and traditions of sustainable fishing have become more important than ever. Nelly and Michael Hand of Drifters Fish are proud to uphold and promote a standard of sustainable harvest and are committed to sharing this knowledge and reverence of salmon to a wider audience. Join us for this incredible opportunity to learn about wild salmon, including proper processing and preservation techniques to ensure that you get the most out of this precious resource. Nelly and Michael will demonstrate how to prepare pickled wild salmon, and guide the group through making gravlax, a Scandinavian style of salmon preserved in a blend of salt and sugar. Students will process Copper River Coho, harvested by Nelly from her small boat in pristine waters of Alaska. Everyone will take home a batch of preserved salmon, a tray of gravlax, and recipes to enjoy and share.
No previous experience necessary. Open to all adults, 16 years & up.
