Tuition: $150 |

This class is sold out.

Did you know the landscape around you is alive with delicious and nutritious wild ingredients in the spring? From edible blossoms and fern fiddleheads to salad greens and wild herbs, our local forests provide us with an abundance of food. Join us for a day of walking in the woods, plant ID and guided foraging for wild spring edibles in the coastal forests with a focus on sustainable harvest. Lorelle will guide students through the process of correctly identifying and processing a range of spring wild edibles. You will learn how to harvest and disarm stinging nettle before learning of its long list of culinary and medicinal uses. We will also cover processing and cooking the infamous spring fiddlehead, and what combinations of wild foods make refreshing hot and iced wild teas. If the timing and weather are right, the group will taste test ingredients along the way and each student will collect greens and herbs to take home for their own personal batch of wild greens pesto! Students will leave class with new knowledge of plant ID and hopefully a basket of wild edibles. This forage will be held near the Tillamook State Forest. An exact meeting location will be provided 5 days prior to the forage date.

This workshop is open to all adults 16 yrs & over, who are prepared to hike all day (rain or shine) on uneven terrain, off-trail. This is not a suitable workshop for those with health conditions that may be triggered by hiking, carrying a backpack, or being outside for 5+ hours in variable weather conditions. Please leave dogs at home. No previous experience necessary. A detailed packing list is included in the confirmation email, and info about our foraging location will be provided 5 days prior to the workshop date.
